Fit Apple Pancakes

Soft, naturally sweet and packed with apple flavor. The diced apple keeps the center moist, while the slices caramelize beautifully in the pan.

Ingredients

  • 2 medium apples
  • 2 large eggs
  • 250 g plain Greek yogurt or Skyr
  • 120 g oat flour
  • 30 g vanilla protein powder
  • 70–80 ml milk of choice
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • A little coconut oil or cooking spray
  • Powdered erythritol or shredded coconut for topping, optional

Instructions

  1. Peel and finely dice half of one apple into small pieces, approximately ¼ inch or 5–6 mm.
  2. Leave the skin on the remaining apples and cut them into thin slices for decorating the pancakes.
  3. In a large bowl, whisk together the eggs, Greek yogurt, milk and vanilla until smooth.
  4. Add the oat flour, protein powder, baking powder, cinnamon and salt. Mix until you have a thick, creamy batter.
  5. Gently fold the finely diced apple into the batter. If the mixture appears too thick, add another tablespoon of milk. It should be thick but easy to spoon.
  6. Lightly grease a nonstick pan and place it over medium-low heat.
  7. Spoon small rounds of batter into the pan. Keep the pancakes relatively small so they are easy to flip.
  8. Place two or three thin apple slices on top of each pancake and gently press them into the batter.
  9. Cook for approximately 3 minutes, until the bottom is golden and the edges begin to set.
  10. Carefully flip each pancake and cook for another 2–3 minutes. Keep the heat fairly low so the center cooks completely and the apple softens without burning.
  11. Serve warm with cinnamon, shredded coconut or a light dusting of powdered erythritol.

Storage

Keep the pancakes in an airtight container in the refrigerator for up to 3 days. Reheat them briefly in a pan, microwave or air fryer.

You can also freeze them for up to 2 months. Place a small piece of parchment paper between each pancake before freezing.
