Soft, naturally sweet and packed with apple flavor. The diced apple keeps the center moist, while the slices caramelize beautifully in the pan.
Ingredients
- 2 medium apples
- 2 large eggs
- 250 g plain Greek yogurt or Skyr
- 120 g oat flour
- 30 g vanilla protein powder
- 70–80 ml milk of choice
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
- A little coconut oil or cooking spray
- Powdered erythritol or shredded coconut for topping, optional
Instructions
- Peel and finely dice half of one apple into small pieces, approximately ¼ inch or 5–6 mm.
- Leave the skin on the remaining apples and cut them into thin slices for decorating the pancakes.
- In a large bowl, whisk together the eggs, Greek yogurt, milk and vanilla until smooth.
- Add the oat flour, protein powder, baking powder, cinnamon and salt. Mix until you have a thick, creamy batter.
- Gently fold the finely diced apple into the batter. If the mixture appears too thick, add another tablespoon of milk. It should be thick but easy to spoon.
- Lightly grease a nonstick pan and place it over medium-low heat.
- Spoon small rounds of batter into the pan. Keep the pancakes relatively small so they are easy to flip.
- Place two or three thin apple slices on top of each pancake and gently press them into the batter.
- Cook for approximately 3 minutes, until the bottom is golden and the edges begin to set.
- Carefully flip each pancake and cook for another 2–3 minutes. Keep the heat fairly low so the center cooks completely and the apple softens without burning.
- Serve warm with cinnamon, shredded coconut or a light dusting of powdered erythritol.
Storage
Keep the pancakes in an airtight container in the refrigerator for up to 3 days. Reheat them briefly in a pan, microwave or air fryer.
You can also freeze them for up to 2 months. Place a small piece of parchment paper between each pancake before freezing.
